Party at The Clearing Cafe

Your invited to come celebrate with us an expansion of sorts - the Clearing Cafe is celebrating our new beer and wine license, later hours, and some new menu items!  Friday June 12th from 6-9 at The Clearing Cafe 2772 NW Thurman St.  There will be music, food, drinks, and merriment - we look forward to seeing you there!

How we love RISTRETTO!

Ristretto Roasters is a prime example of coffee should truly be done. As a purveyer to eleven local businesses and holding down two Ristretto Roasters Cafe's in Nopo they remain completely committed to serving and providing exceptional coffees to all. Having worked with five different roasters during my career in coffee, they have remained the most consistant in the quality of the roast and uniqueness of their blends. One of my personal favorite thing about them is that the Beaumont Espresso Blend (the Clearing's primary espresso) is so full of character, never abrasive to the pallet and so easy to work with it's almost obscene. You can pull beautiful fruits such as apricot, dates, grapefruit, currents, and dark chocolate (I personally think the chocolate notes are similar to a dark chocolate brownie with caramel swirls :D) with a wonderfully warm nutmeg finish. The body is full and sultry. Unlike many other espresso blends it doesn't have that overly salty and sometimes chalky feeling on your pallet.

All of our baristi are trained by Ristretto's own Leticia Ramos, a lovely lady with mad amounts of experience in the coffee industry. She can drop knowledge bombs all day long, if you get a chance to talk with her, savor it. We keep our baristi on the up and up by checking on their espresso habits daily to try and maintain consistancy, and make sure they have the necessary knowledge by keeping communication completely open between Ristretto and ourselves.

Brazilian, Cerrado Region, Delarisse Farm
From the farm of our favorite Brazilian cowboy, Ruvaldo Delarisse, this juicy coffee tastes of caramelized sugar, leather and Maraschino cherries, and has a long, sweet finish.

 

Colombian Mesa de Los Santos Organic (Rain Forest Alliance)
With a peppery nose, this coffee has a sweet, creamy body and the taste of honey and dried dates

Ethiopia Yirgacheffe Organic, Natural

This dry-processed coffee leans toward the ripe blueberry of a Harar, as opposed to the citrus and spice notes of other Yirgacheffes. Fresh and crisp, with a solid medium-body.

Swiss Water Decaf Blend


Beaumont Blend Espresso

With deep dark chocolate and ripe berry, this blend makes a superb straight espresso that also stands up beautifully to milk. Ideal for French press and other brewing methods.

Sumatra Mandheling Organic

Bold, with lots of body, earth tones, and a touch of chocolate.
